    Ingredient tips

    Here's all you need to make this silken tofu chocolate mousse:

    Chocolate - For the best taste we recommend a bar of vegan chocolate. You can also use chocolate chips if that is all you have.

    Use bittersweet or semisweet depending on your preference for sweetness. I like organic chocolate with 70% cocoa content.

    Silken tofu - This is a soft and silky variety of tofu that goes great in vegan desserts. It comes in different textures, such as soft or firm, you can use either with good results in this mousse.

    Look for shelf-stable silken tofu in the Asian aisle of the grocery store or in the refrigerator with other types of tofu.

    Maple syrup - Just a bit of sweetness to bring out the chocolate flavor.

    Nut butter - This is an optional extra that adds richness and a bonus taste element to the mousse.

    If you are a fan of peanut butter, then it's a delicious addition. Almond butter or hazelnut butter also goes fantastically well with the chocolate.

    Vanilla extract - Just a little to enhance the overall flavor of the mousse.

    Here's how to make this silken tofu chocolate mousse. Full detailed recipe and quantities in the recipe card at the end of the post.

    Step 1 - Blend the silken tofu.

    Step 2 - Melt the chocolate.

    Step 3 - Add the melted chocolate and blend.

    Step 4 - Scrape down the sides of the bowl and blend in the remaining ingredients (maple syrup, nut butter and vanilla extract).

    Top tip! Use room temperature silken tofu for best results. Cold tofu can cause the chocolate to immediately harden and produce a grainy texture.

    Substitutions and variations

    You can substitute another sweetener for the maple syrup, such as coconut sugar, agave syrup or vegan powdered sugar.

    For a nut-free option, you can use tahini or sunflower seed butter, or simply leave out the nut butter.

    One of my favorite versions is chocolate orange mousse. To the mousse mixture, add two teaspoons of fresh orange juice and the zest of one orange.

    Add a layer of date caramel under the mousse for a tasty dessert.

    Use a bar of flavored chocolate such as mint, orange, or coconut to easily vary the mousse flavor.

    Serving

    Here are three brilliant ways to serve your silken tofu mousse:

    1. Top with Plant-based whipped topping or Coco Whip and chocolate shavings for a delicious finishing touch.
    2. Add fruits such as raspberries, strawberries, or cherries.
    3. Sprinkle a crunchy element on top, such as granola, roasted or caramelised nuts or cacao nibs.

    Storage

    Keep chilled in the fridge in covered containers for up to 3-4 days.

    Ingredients 

    • 3.5 oz bar (100 g) vegan chocolate
    • 12 oz pack (340 g) silken tofu
    • 2 tablespoons maple syrup
    • 1 tablespoon nut butter optional
    • ½ teaspoon vanilla extract

    Instructions

    • Drain the excess liquid from the pack of silken tofu.
      12 oz pack (340 g) silken tofu
    • In a food processor or blender, blend the tofu until smooth.
    • Roughly chop or break the chocolate into pieces and then melt it in a double boiler, heatproof bowl over a simmering pan of water or in the microwave in 30 second intervals until smooth.
      3.5 oz bar (100 g) vegan chocolate
    • Add the melted chocolate to the blender and blend again.
    • Scrape down the sides using a spatula, add the maple syrup, optional nut butter and vanilla extract and blend again until you have a creamy and smooth chocolate mixture.
      2 tablespoons maple syrup, 1 tablespoon nut butter, ½ teaspoon vanilla extract
    • Divide the chocolate mousse between 4 small serving dishes or jars (about ½ cup or 120ml per portion) and chill for 1 hour before serving.

    Notes

    Silken tofu should be at room temperature for the best results. If your tofu is the refrigerated kind, bring it out of the fridge 30 minutes before using.
    Nut butter is an optional extra that adds richness and a bonus taste element to the mousse. If you are a fan of peanut butter, then it's a delicious addition. Almond butter or hazelnut butter also goes fantastically well with the chocolate.

      Can I use unsweetened chocolate like from a bar for baking?

        Hi Nicki, We'd recommend using a bar of 70% dark chocolate for the best flavor. Unsweetened chocolate with 100% cocoa is naturally quite bitter, so will likely want extra sweetness to balance. If you want to try with unsweetened chocolate, I'd recommend adding extra maple syrup or perhaps a blended date or two. Hope that helps and do let me know how it goes 🙂
