    Ingredient tips

    The ingredients for this vegan chocolate covered strawberries recipe are easy. All you need is:

    Strawberries - Choose fresh strawberries that are firm, ripe and red all the way up to the stem for the best flavor and appearance.

    Vegan chocolate - We prefer to use quality dairy-free chocolate bars for the best taste.

    I'm a big fan of bitter-sweet, dark chocolate so we often use organic chocolate with 70% cocoa. If you prefer sweeter chocolate, you can use semi-sweet chocolate.

    Chocolate chips are made with less cocoa butter and are often designed to keep their shape when baking. This means they don't always melt so easily, which is why we prefer to use chocolate bars rather than chips.

    However, you can also use your favorite brand of vegan chocolate chips, such as Enjoy Life chocolate chips.

    And optional toppings of your choice! We use shredded coconut and chopped almonds this time.

    Step by step pictures

    Here's how to make vegan chocolate strawberries. Full detailed recipe and quantities are in the recipe card at the end of the post.

    Step 1 - Wash and carefully dry the strawberries.

    Step 2 - Melt the chocolate in a double boiler, a bowl over a simmering pan of water.

    Step 3 - Dip the strawberries in the melted chocolate.

    Step 4 - Optionally, immediately after dipping in chocolate, roll the strawberries in optional toppings.

    Step 5 - Set down the covered strawberries on a parchment-topped baking sheet and wait for the chocolate to cool down and set.

    How to melt chocolate

    We like to 'quick temper' the chocolate for this recipe, which results in a more shiny chocolate coating that sets better.

    This is achieved by adding some unmelted chocolate to already melted chocolate and stirring it so that it melts with just its own heat.

    This also helps the chocolate to become a good temperature for dipping.

    Double boiler / stovetop method

    Find a heatproof bowl that fits snugly over a pot.

    Fill the pot with water, but not so high that the water touches the base of the bowl, and heat to a gentle simmer.

    Chop the chocolate and place approximately two-thirds of the chocolate in the heatproof bowl and stir frequently until it melts completely.

    Remove the bowl from the heat, add the remaining chopped chocolate and stir until smooth.

    Microwave method

    Chop the chocolate into pieces and place approximately two-thirds of the chocolate in a microwave-safe bowl.

    Microwave the chocolate in 30 second intervals, stirring each time, until the chocolate is molten and smooth.

    Remove from the microwave, add the remaining chocolate and stir until smooth.

    Top tip! When melting chocolate, always use very dry bowls and utensils, as water can cause chocolate to clump together and seize.

    Substitutions and variations

    Vegan milk chocolate or vegan white chocolate can also be used to cover strawberries, but it is typically more difficult to work with.

    Because it hardens quicker and is more prone to clumping, you need to work quickly. It is also more prone to overheating, so use shorter 15-second increments if melting it in the microwave to avoid burning it.

    If you want to add a decorative vegan white chocolate drizzle, wait until the chocolate coating has set and then drizzle the melted chocolate on them using a piping bag fitted with a very fine nozzle.

    You can use this same technique to dip other fruits such as banana, blueberries, or cherries. You can even dip cookies and pretzels too!

    Topping ideas

    There are lots of delicious things that you can add on top of the chocolate coating! Here are some ideas for you:

    • Shredded coconut
    • Crushed or finely chopped nuts
    • Freeze-dried fruit powder
    • Cocoa nibs
    • Crushed vegan cookies or pretzels
    • Vegan sprinkles

    Serving

    For best flavor, allow to come up to room temperature before serving.

    You can make a chocolate strawberry bouquet by placing the top of each strawberry on the end of a wooden skewer. Wrap in parchment paper and tie with a ribbon, or serve in a glass vase.

    Chocolate strawberries are also delicious served as part of a vegan dessert charcuterie board. Arrange with other delicious vegan treats and fruits on a wooden board and enjoy!

    Storage

    It's best to eat chocolate strawberries on the day they are made. Keep them on the sheet chilled in the fridge or on the counter in a cool, dark location out of direct sunlight until serving.

    Chocolate-covered strawberries are not suitable for freezing, as the strawberries will become soggy and their juice will spoil the chocolate coating.

    What can I do with leftover chocolate?

    You can let the chocolate set and store it in the fridge until you use it again. You can make an easy chocolate sauce or ganache by melting it again and adding some dairy-free milk. I also like to add it to hot chocolate.

    Ingredients 

    • ½ pound (225 g) strawberries
    • 1 cup (around 6 oz / 170 g) vegan dark chocolate chopped

    Optional toppings

    • chopped nuts almonds, hazelnuts, pistachios
    • shredded coconut

    Instructions

    • Wash and dry the strawberries carefully.
      It's important to dry the strawberries very well, as water can cause the chocolate to run off or seize.
      ½ pound (225 g) strawberries
    • Prepare a large baking sheet with a sheet of baking parchment.
    • Roughly chop the chocolate. Place ⅔ of the chocolate in a heatproof bowl over a pot of simmering water.
      When the chocolate has melted, take the bowl off the saucepan and stir in the remaining chocolate until it is all smooth.
      1 cup (around 6 oz / 170 g) vegan dark chocolate
    • Holding a strawberry by the stalk and leaves, dip it in the chocolate. Let the excess run off and slide the bottom of the strawberry against the inside of the bowl (this reduces the amount of chocolate that pools on the base).
    • If you want to dip a strawberry in a topping such as coconut or nuts, then do this straight after dipping it in the chocolate.
    • Set the strawberry down on the lined baking sheet and continue to coat the remaining strawberries.
    • Let the chocolate set at room temperature, or chill for 15 minutes in the fridge or until the chocolate hardens.

    Chocolate strawberries are best on the day they are made. Store for up 24 hours chilled in the fridge or on the counter in a cool, dark location out of direct sunlight until serving.
